I have some exciting things I am preparing to launch and wanted you to be the first to hear about them. A few months ago I told you about some nutrition e-courses that I have been working on and now I am ready to roll them out! The first series of e-courses will roll out on Monday, March 15th. Regardless of the course you choose you will need to set aside some time each week to go through the information and complete the “food work” (yep, that is my corny name for homework). I know, I know – who has time for more work?! The good news is that – this can be done on your time. Each week I provide you with educational and practical information and then ask you to complete or implement your “food work.” You will be amazed at what you can learn and accomplish by committing to work with me for the next 42 days. At the beginning of the week you will be mailed your “food lesson” and “food work” to be completed during the week. The information will be FRESH and I think you will even have a little FUN working with me as you learn more about each topic. The ultimate goal with each e-course is for you to LOOK and FEEL your personal best. There is no pass or fail with my “food work”, but you will get out of it what you put into it. Over the next six weeks you will be TRANSFORMING your eating habits and behaviors. I am not promising a magic weight loss pill, but I am promising something way more valuable and lasting. I also love snacking on sugar snap peas and cherry tomatoes with hummus.” - Yvette -Recipe of the Month: Chicken Tacos with Southwest Slaw - 1 lb of chicken tenderloins Tony’s 1 tsp chili powder 1 tsp olive oil 4 c very thinly sliced cabbat 1 c chopped grape tomatoes ¼ c chopped fresh cilantro 1/3 c thinly sliced green onions 1 seeded chopped fresh jalapenos 2 Tbsp fresh lime juice 5 tsp olive oil ¼ tsp salt Whole wheat tortillas Directions: In a large bowl, combine cabbage through jalapenos. Add lime juice, 1 Tbsp olive oil, and salt. Toss well to combine. Heat remaining 2 tsp oil in a large nonstick skillet over medium high heat. Sprinkle tenderloins with chili powder and Tony’s. Add chicken to pan; cook 3 minutes on each side or until golden brown. Warm tortillas according to package instructions. Spoon slaw in the center of each tortilla and top with desired amount of chicken. I also serve black beans and brown rice alongside the tacos. Enjoy! Kate H.
